A Special Apple Crisp Recipe for Rosh Hashanah

To kick off a sweet new year, the staff at the PJ Library home office wanted to do something a little bit different from past years. To get ready for the High Holidays this year, we’re sharing recipes from our own families and kitchens — a simple and beautiful way to feel connected to our partners and subscribers and to share the memories that make our own Rosh Hashanah memories so sweet.

Our first recipe is from Jessica, PJ Library’s western region engagement officer, and honors her grandmother, of blessed memory.

Ingredients:

  • 4 teaspoons of butter or shortening, plus extra to grease your baking dish
  • 3 cups cornflakes
  • 3 apples, peeled, cored, and diced
  • 1 1/3 teaspoons cinnamon
  • 1 cup total of packed brown sugar and granulated sugar

Preparation:

  1. Preheat the oven to 375° Fahrenheit.
  2. Grease a baking dish with butter or shortening.
  3. Let the four teaspoons of butter melt in a measuring cup.
  4. Combine the cinnamon and sugars mixture in a separate container.
  5. Combine one cup of cornflakes, one cup of apples, and one-third of the sugar and cinnamon mixture, and place in baking dish.
  6. Repeat this process two more times until there are three layers of cornflakes, apples, and the cinnamon sugar mixture in the baking dish.
  7. Pour the melted butter over the top.
  8. Cover and bake for 45 minutes.
  9. Remove the cover.
  10. Bake for an additional 15 minutes or until the crumbs are nice and soft.
