Subscribers who enjoyed our special interview with Ruhama are in for a surprise: a perfect, easy-to-prep recipe that travels well in school lunches. If your child attends a school with a nut-free lunch policy, prep a batch of these and pack them throughout the week.
Ingredients:
*makes nine fritters
- 2 fresh ears of corn
- 1 package of cottage cheese (5.3oz / 150g)
- 1 cup of shredded mozzarella cheese
- 2 eggs
- 1/2 cup of all-purpose flour
- 1 teaspoon of baking powder
- 3/4 teaspoon of salt
- Olive oil or avocado oil spray for the fritters
Preparation:
- Preheat the oven to 400F/200C.
- Cut the kernels off of your ears of corn.
- Add all of the ingredients to a bowl and mix them well.
- Place a sheet of parchment paper on a baking pan.
- Using a greased cookie scoop, put scoops of the mixture onto the baking pan.
- Spray olive oil or avocado oil on the fritters.
- Bake for 20 minutes or until it gets a nice golden color.
TIP: Serve it with fresh veggies for a perfect lunch idea.
