The Perfect Make-Ahead Recipe for School Lunch

 

 

Subscribers who enjoyed our special interview with Ruhama are in for a surprise: a perfect, easy-to-prep recipe that travels well in school lunches. If your child attends a school with a nut-free lunch policy, prep a batch of these and pack them throughout the week.

Ingredients:

*makes nine fritters

  • 2 fresh ears of corn
  • 1 package of cottage cheese (5.3oz / 150g)
  • 1 cup of shredded mozzarella cheese
  • 2 eggs
  • 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 3/4 teaspoon of salt
  • Olive oil or avocado oil spray for the fritters

Preparation:

  1. Preheat the oven to 400F/200C.
  2. Cut the kernels off of your ears of corn.
  3. Add all of the ingredients to a bowl and mix them well.
  4. Place a sheet of parchment paper on a baking pan.
  5. Using a greased cookie scoop, put scoops of the mixture onto the baking pan.
  6. Spray olive oil or avocado oil on the fritters.
  7. Bake for 20 minutes or until it gets a nice golden color.

TIP: Serve it with fresh veggies for a perfect lunch idea.
