How to Make Your Very Own Corn Tortillas

During Passover, Jewish families all over the world eschew chametz, or grains that have a leavening agent. Depending on your family’s own culture and traditions, there may be other foods you also avoid, called kitniyot, like beans or rice. For many Jews, both Sephardic and Ashkenazi, corn consumption during Passover is considered a safe bet. If you’re looking for another delicious bread alternative to enjoy after your box of matzah runs out, you can make these tortillas with your kids. And, if your family avoids corn during Passover, save this recipe for later in the year – tortillas make a great addition to Shabbat picnic baskets and outdoor dinners in the sukkah too.

Ingredients

  • 2 cups Masa harina (corn flour)
  • 1 ¾ cups water
  • ½ tsp salt

Preparation

  1. In a large bowl, mix together all ingredients, using your hands.
  2. Use your hands to roll your dough into pieces that are about the size of a golf ball.
  3. Next you’ll press your tortillas. You can use a tortilla press or a rolling pin to flatten each ball of dough.
  4. If you’re using a tortilla press, you’ll line the press with plastic wrap, and flatten one ball at a time. If you’re using a rolling pin, you’ll also place your dough between two pieces of plastic wrap before rolling it.
  5. Stack the flattened dough discs under a damp towel until you’re ready to cook them. If the dough mixture gets too dry, add more water, one tablespoon at a time.
  6. Heat a griddle over medium heat, and very lightly grease it with oil or cooking spray.
  7. Carefully place one tortilla on the griddle at a time, and cook for about 1 minute per side, or until desired doneness is achieved.

TIP: Have fun customizing your dough with mix-ins like:

  • Lime zest
  • Finely minced jalapeno pepper
  • Finely shredded cheddar cheese
  • Flax seed
  • Everything Bagel seasoning mix
