
At many Mimouna celebrations, sesame seeds (and tahini, made from the seeds) steal the show. Try these yummy easy-to-make cookies.
Ingredients:
- ½ cup tahini
- 2 tbsp sesame seeds
- 4 tbsp butter, softened
- ¼ cup white sugar
- ¼ cup packed brown sugar
- 1 egg
- 1 tsp vanilla extract or vanilla bean paste
- ¾ cup flour
- ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
Preparation:
- Using an electric mixer, cream the tahini, sesame seeds, butter, white and brown sugars, egg, and vanilla until well combined.
- In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
- Add the tahini mixture, one third at a time, to make a dough, and stir between each addition.
- Cover and refrigerate the dough for 30 minutes.
- Preheat the oven to 350˚.
- Remove the dough from the refrigerator and form it into 1-inch balls.
- Place the balls on a parchment-lined baking sheet, and bake the cookies for 10-12 minutes or until their edges are slightly browned.
- Let them rest for 10 minutes before moving them to a rack to cool completely.
