You may not be traveling across the Red Sea, but if you’re packing lunches or trying to get a fussy child to eat, you’ll love this healthy, fast, side dish. Use the caprese style recipe below as a blueprint for your salad and then change things up by swapping the type of cheese, as well as the fresh vegetables used. Try some fresh bell pepper or some spinach leaves. This also works with fruit, such as grapes, and softer nuts like walnuts.

Ingredients:
Romaine lettuce, chopped in 1-inch pieces
Cherry tomatoes
Seedless cucumber
Mini-mozzarella balls
Sliced carrots
Basil leaves
Preparation:
Thread ingredients onto a skewer and serve alongside your favorite salad dressing for dipping.
