Apple Honey Sundaes for Rosh Hashanah

Before acai and smoothie bowls filled up social media feeds, parents all over knew about "nice-cream" — an easy frozen banana treat resembling soft serve. The nice cream love remains strong among our PJ Library team, so here's a Rosh Hashanah themed twist (one kid described this as "tasting like fall") to add to your breakfast or after school treat repertoire.

Ingredients

  • 4 bananas, peeled, sliced, and frozen
  • 1/4 cup apple juice
  • 1/2 cup apple butter
  • pinch of sea salt (optional)
  • 1 tablespoon honey
  • Toppings of your choice: granola, caramel, yogurt chips, toasted coconut, fresh apple slices

Preparation

  1. To make the ice cream, combine frozen bananas, apple butter, juice, and honey in a blender or food processor and combine.
    • TIP: If you do not have a food processor use the blender's pulse function and add a bit more liquid.
  2. Scoop nice cream into bowls (it will be a bit like soft serve right out of the blender) – if your family prefers hard ice cream, just transfer to a container and freeze until you're ready to make your "sundaes."
  3. Add your preferred or favorite toppings
  4. Eat and enjoy
